Potato & Pancetta Pizza

My Nonna used to make a pizza with potatoes and onions over top. I could probably say it was more like a pizza-bread, but regardless, the combination of those two items were always delicious. I have often paired potatoes with pancetta as a side dish. Another common duo are potatoes and rosemary. The thought of all these flavors and menu favorites on one pizza just sounded too delicious to not give a try. There is no cheese on this pizza, but the fun of making pizza is that you can play around however you like. So go ahead and add cheese or anything else that excites you for this, enjoy!

Follow your favorite pizza dough recipe or simply ask your bakery for a bag of their homemade pizza dough.

Ingredients

  • 1 small yukon potato, sliced very thin

  • 1 small yellow onion, sliced thin

  • 1 cup diced pancetta

  • olive oil

  • salt

  • a few sprigs of rosemary, chopped

  • pizza dough

Instructions

Make sure your dough is ready to go and at room temperature.

  1. Preheat oven to 500.

  2. Heat a pan over medium low temperature, add a tablespoon of olive oil and sauté the onions and pancetta for about 5-7 minutes. Remove from heat and set aside.

  3. Slice potatoes very thin and mix in a bowl with some drizzled olive oil, sprinkle of salt, and rosemary.

  4. On a floured working surface, roll out your dough nice and thin.r

  5. Then, using a fork, prick all around the dough to avoid air bubbles from forming. Then brush olive oil over the dough to give it a nice golden color.

  6. Top with potatoes then onion and pancetta mixture.

  7. Cook for 10-12 minutes.
