Ciabatta French Toast

Well this beautiful loaf of ciabatta bread lasted less than 24 hours in my house!  I had some leftover from dinner so I decided to use it for breakfast, I mean, there was no way I was letting this fresh, delicious loaf of heaven go to waste. At first, I was just going to be simple...toast it and spread some Nutella, but after having such a tasty french toast breakfast while visiting with my cousins in Toronto, I instantly knew what I was going to do with this leftover bread. My zia made the most amazing French toast one morning and I couldn't wait to use a few of the pointers I learned from her that day. Using ciabatta bread really made such a difference in this meal. The fluffiness of the ciabatta soaked up the milky, sweet egg mixture to give each bite an extra burst of flavor and juiciness, enjoy!

Ingredients

  • 6 thick slices of ciabatta bread

  • 3 eggs

  • 1 cup of vanilla almond milk

  • 2 tablespoons of sugar

  • 1 teaspoon ground cinnamon

  • butter

  • Maple syrup

  • Nutella

  • Powdered sugar

Instructions

  1. In a shallow, wide bowl whisk together: milk, eggs, sugar, cinnamon

  2. Heat your griddle to about 350/400 or your large skillet to medium heat.

  3. Once your griddle or pan is hot start to dip each slice of bread into your mixture. Making sure both sides are covered.

  4. Grease pan or griddle with butter, then add a few slices of your bread to the hot surface.

  5. Cook until that side turns a golden brown color, couple minutes.

  6. Once you flip your slice, butter the finished cooked side.

  7. Continue until you use all your slices.

  8. Serve warm and top with syrup and powdered sugar. Adding a little Nutella topping is a tasty treat too!
