Buffalo Panino

You'll always be sure to find some type of buffalo chicken inspired food at any football party or tailgate. I came up with this sandwich as something that was not only simple to assemble, but also easy to put out for a crowd. You can really use any cheese you'd like. You can even add some sliced celery into the mix with some bleu cheese crumbles to really recreate a buffalo wing experience in a sandwich!

The amounts of buffalo sauce and cheese depend on how much chicken you use. You can really just add shredded cheese and buffalo sauce to your shredded chicken to your liking, without measuring.

Ingredients

  • 1/2 to 1 cup of Frank's Red Hot buffalo sauce

  • 1 to 2 cups of shredded mozzarella cheese

  • 2-4 cups of shredded cooked chicken

  • mayo

  • 3-6 ciabatta bread rolls (or any bread of your choice)

Instructions

  1. Combine together in a mixing bowl: chicken, buffalo sauce, cheese.

  2. Slice ciabatta in half, scoop out extra bread, and spread mayo on both slices.

  3. Add a scoop of chicken mixture onto one slice of the bread and close sandwich. Be careful not to put too much chicken on one sandwich, causing it to spill out when you press in panini press.

  4. Make sure your panini press is nice and hot, or simply heat a grill pan on the stove and press sandwich down with another pan as the top weight.

  5. Once hot and toasty, remove from heat, slice in half and transfer to serving tray.
