Semi-Homemade Ravioli

I wanted to add a recipe that kids could actually do on their own, and ravioli is the perfect thing for their little fingers! When it comes to boiling the water, they will need help from a grown-up, but the "hardest" part is easy and safe for children (or beginners) :) This recipe is kid-friendly because of the yummy 3-cheese filling. I also added spinach (because I know a sweet little girl who loves spinach in her cheese ravioli) but if you or your children are not fans of spinach, you can easily omit this item. This semi-homemade version of ravioli is great because there is hardly any mess. You don't need to prepare any pasta dough, wonton wrappers work just as great! Once you assemble the ravioli, you can boil right away or freeze them for using in the future.


Ingredients

  • wonton wrappers

  • 1 cup whole milk ricotta cheese

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • sprinkle of salt and pepper

  • 1 egg

  • 1 cup frozen spinach


Instructions

  1. Keep the frozen spinach out thaw, then drain all the liquid. *Make sure you squeeze out all the water!!*

  2. In a large mixing bowl, combine the 3 cheeses, a sprinkle of salt and pepper, 1 egg, and the thawed spinach. Mix well until combined.

  3. Lay out a wonton square and using a small spoon, place a little amount of the filling in the center. Do not put too much or it won't close nicely.

  4. Before closing it, dip your finger in water and trace two edges, then fold over into a triangle. (as if you are using the water as glue)

  5. Press firmly around the edges to make sure it is sealed all the way arouond. You can then carefully press again using a fork for a little extra design.

  6. When ready to cook, bring water to a boil and add salt. Ravioli will cook quickly. As soon as they float to the top they are finished, scoop them out as they float up.

  7. Serve your favorite sauce over top and enjoy!
