Lemony Chicken, Asparagus & Tortellini
All these flavors came together so nicely. You don't even need to add the chicken, you can just use this recipe with the lemon and cheese sauce, asparagus and pasta. If you like the flavor of lemons, you really need to try this. Especially with the cheese mixed in, then the cheese in the tortellini, it's delicious, you won't be able to stop eating it. At least that's what happened to me :)
Ingredients
2 chicken breasts- cleaned and trimmed of fat
1 package of asparagus- cleaned and ends trimmed off
1 package of cheese tortellini
2-3 cloves of garlic- sliced
tablespoon olive oil- for cooking chicken
1/3 cup olive oil- for sauce
lemon juice from 2 lemons
1/2 cup grated parmesan cheese
salt and pepper
sprinkles of dried oregano
crushed red pepper flakes
Instructions
Start boiling water and cook tortellini according to the package directions.
Then move onto the chicken. Clean and trim fat then slice into pieces. When chicken is all cut and spread out over cutting board, sprinkle with salt, ground black pepper, and dried oregano.
Heat a large pan on low and drizzle a tablespoon of olive oil and lightly cook the garlic, be careful not to burn it.
Once pan is hot and garlic is sizzling add the chicken and stir to coat in the olive oil. Turn up to medium heat. Cook until the chicken isn't showing anymore pink and is starting to golden all around. Should be about 8-10 minutes. Stir occasionally, you may slightly cover with the lid of the pan.
While chicken is cooking, clean and cut your asparagus into about one inch or so pieces.
Whisk together 1/3 cup of olive oil, 1/2 cup parmesan cheese and squeeze 2 lemons. This will be your sauce. Set aside
Make sure you are paying attention to the pasta cooking and also the chicken to stir around occasionally.
Once chicken is just about cooked, maybe 8 minutes (you can break one in half with the wooden spoon you are using to stir it, check how it's cooking, if it breaks easily and there is no pink, it is done) add asparagus and lower heat. Stir well to combine. Cook for a couple minutes so the asparagus can become a little more tender but still will have a nice crunch.
Drain the tortellini and add it to the pan. Pour the sauce over everything, you can crack some fresh black pepper and mix well on low for about a minute or so.
Serve immediately, top with freshly grated parmesan cheese and red pepper flakes.
