Good Ol Chicken Dicken! Now why in the world is this recipe called Chicken Dicken? Well, to start, a five year old named this recipe so that’s the best and the only explanation for that one. On the other hand, anyone out there who has tried a “copycat” Chick-fil-a nuggets recipe, knows they supposedly soak their chicken in pickle juice. So why not use pickle juice as your Instant Pot liquid for chicken!? This cannot get any easier. Make this on a Sunday to have flavorful, healthy and juicy shredded chicken on hand for salads, quesadillas, wraps, or anything your tummy desires. *My favorite healthy alternative tip: if you are making a chicken salad, use plain Greek yogurt instead of mayo!

*Tip: use an electric hand mixer to shred the chicken right in the Instant Pot with all the leftover juice!

*If you are using a slow cooker for this recipe, use the same ingredients. Cook on low for 4-5 hours or high for 2-3.

Ingredients:

  • 4 boneless chicken breasts

  • 1 cup dill pickle juice

Instructions:

  1. Place chicken breasts at the bottom of the Instant Pot (or slow cooker).

  2. Pour pickle juice over the chicken.

  3. *If you are using a slow cooker for this recipe, place lid on then cook on low for 4-5 hours or high for 2-3.

  4. *Instant Pot- Place lid on the Instant Pot, lock into place, make sure the valve is on SEALING.

  5. Cook on high pressure for 15 minutes, natural release for 5 minutes before quick releasing. Leave chicken in all the juice created from cooking.

  6. Turn off the Instant Pot. Then, Plug in your electric hand mixer and place directly into the Instant Pot. Begin to shred chicken in the juice made from cooking.

  7. Transfer all the shredded chicken and juice to a large bowl for storing, or let cool then place Instant Pot silicone lid to cover and store in the fridge until you want to use the meat.

  8. Use chicken hot or cold in salads or sandwiches.
