Baked Salmon
If you are a fan of salmon, you will most definitely be pleased with a satisfied belly and heart after trying this recipe. Salmon is rich with omega- 3 fatty acids, high in protein and packed with other essential vitamins and minerals we need to keep a healthy mind and body. Complete this meal in under 30 minutes by serving over jasmine rice or even a bed of lettuce and create a hearty salad. Enjoy!
Ingredients
2- 1lb. Fillets of raw, wild salmon
2 lemons (1 sliced, 1 juiced)
Fresh dill
½ teaspoon dried thyme
2 tablespoons soy sauce
¼ cup olive oil
1 tablespoon brown sugar
1 teaspoon dijon mustard
¼ teaspoon paprika
¼ teaspoon cayenne
¼ teaspoon garlic powder
¼ teaspoon black pepper
¼ teaspoon salt
Instructions
Preheat oven to 450.
Rinse salmon, pat dry and place in a baking dish.
In a small mixing bowl, whisk together: thyme, soy sauce, olive oil, juice of one lemon, brown sugar, dijon mustard, paprika, cayenne, garlic powder, black pepper and salt.
Pour marinade over salmon.
Place 2-3 lemon slices on each salmon fillet. Top with a some fresh dill leaves and bake 12-15 minutes.
Serve with veggies, over jasmine rice or a bed of lettuce.
