Taco Stuffed Peppers

Even though it still feels like summer here in South Florida, it's always a good feeling once it becomes the fall season. Between hoping for a temperature change, fall produce and of course Halloween, October seems to be a well liked time of year for most of us around here. Trick or Treat yourselves to these Jack o' Lantern stuffed peppers as you get into the Halloween spirit!

Ingredients

  • 6 bell peppers

  • 1 pound ground turkey breast

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 6 green onions, chopped

  • 15 oz. can black beans

  • 1 cup frozen corn

  • 1/2 pack taco seasoning

  • 2 cups shredded cheddar cheese

Instructions

  1. In a large pan over medium heat, heat olive oil, once hot add ground turkey meat. Use a wooden spoon to break up as it cooks. Once it is about half way cooked, add just the white parts of the green onion and minced garlic. Stir to combine as it cooks.

  2. After a few minutes, most of the pink in the meat should be gone, now add your black beans, corn and green parts of the green onion. Add the seasoning and stir together until the meat is finished cooking.

  3. Remove from heat and let cool.

  4. In the meantime, preheat the oven to 350 and prepare the peppers.

  5. Wash peppers, slice the tops off and scrap out the middle.

  6. If you are turning them into Jack'o'Lanterns, carve out face now. Place peppers in a baking dish.

  7. Stir in about two handfuls of cheese to the meat mixture. Stir to combine then scoop meat mixture into each pepper, sprinkle a little more cheese over top then add the top of pepper back on to cover each one.

  8. Bake for 30 minutes.
