Jalapeño Poppers
My cousin makes these all the time and they are incredible! I thought these jalapeño poppers would be a great choice to make for a party since they are always such a crowd pleaser. They are quite simple and send such amazing flavor, your guests will be overly impressed!
Ingredients
12 jalapenos
1 package maple bacon, 12 slices
2 sweet potatoes
1/2 teaspoon salt
2 tablespoons brown sugar
1 tablespoon unsalted butter
Instructions
Preheat the oven to 450.
Wash the potatoes then using a fork, pierce holes all around it. Do this to each one then wrap tightly in foil. Bake for 50 minutes. Then once cool, remove skin and transfer potatoes into a bowl to add seasoning and mash.
While the potatoes are cooking start prepping your jalapenos. Slice off the stem then slice in half lengthwise. Do this to all of them. Then using a small spoon, scrape out all the seeds and ribs (the center of the pepper). Set aside until ready to fill with the mashed sweet potatoes.
Remove the potatoes from the foil and peel off the skin. Place potatoes in a mixing bowl. Add the salt, butter and sugar. Mix well to combine.
Slice the bacon in half, so you now have 24 strips.
Using a spoon, scoop a little of the potatoes into the hollow center of the pepper then wrap tightly with the bacon. Place on a baking sheet, then bake at 450 for 15-20 minutes, or until bacon is as crispy as you like. (I placed a rack on the baking sheet first, but it isn't necessary. I just like to so the grease drips below into the pan instead of them sitting in the grease).
