Fresh Salsa

Super FAST and EASY salsa! I used a Vitamix, so the canister is pretty large. If you are using something smaller, use 14oz. cans of tomatoes and 1/2 the onion. If you don't have a Vitamix, a food processor works just as well!


*If you would like this spicier, add more jalapenos. Same goes for if you don't want any spice at all, just don't use it. The salsa may appear a little pink at first, just let it settle and refrigerate.


Ingredients

  • 28oz can Rotel tomatoes with green chilies

  • 28oz can whole roma tomatoes (strained)

  • 1 yellow onion

  • 3 cloves of garlic

  • 1 jalapeno

  • handful of fresh cilantro leaves

  • salt & pepper


Instructions

  1. Peel and cut onion into quaters- put in Vitamix.

  2. Peel garlic- put in Vitamix.

  3. Wash jalapeno, cut off stem, cut in half lengthwise, scrape out seeds- throw in Vitamix.

  4. Pulse all those together a few times until minced/chopped finely.

  5. Add tomatoes, cilantro, salt & pepper.

  6. Pulse a few times until everything is the consistency you like.

  7. Transfer to bowl and it is ready to go!
