Chickpea & White Sweet Potato Hummus

The sweetness from the sweet potato gives this hummus a nice touch. I have been using white sweet potatoes a lot lately and I absolutely love them! I recommend giving them a try. Sometimes they are hard to find, but I have had luck finding them at Greenwise Publix. Keep an eye out for them next time you're shopping.

Ingredients

  • 1 14oz can of garbanzo beans

  • 1 white sweet potato

  • 3 cloves of garlic

  • 2 tablespoons of olive oil

  • fresh squeezed lemon juice of 1 lemon

  • salt and pepper

Instructions

  1. Peel and clean sweet potato, cut into a few chunks and boil until soft. Drain and set aside to cool.

  2. Strain can of beans and add to Vitamix or food processor.

  3. Add all the other ingredients and pulse a few times until it becomes a consistency you like.

  4. I add a few splashes of water so it isn't as thick, add water as needed.

  5. Once you transfer to a bowl, you can drizzle some more olive oil and sprinkle freshly cracked black pepper.
