Pineapple Chicken Skillet

If you don’t own a cast iron skillet, I highly recommend purchasing one soon! They aren’t as intimidating as they seem and once you get comfortable, you’ll begin to find many new ways to use it with recipes. I make chicken breasts in my cast iron skillet often and I love playing around with new flavors or versions of my skillet chicken dishes. I was feeling inspired by tropical flavors when this one came to life and I love how it turned out! You’ve heard a Hawaiin pizza right? Well it’s either something people hate or love, and oddly enough, the inspiration for this chicken dish started with that type of pizza. Although it is a pizza I don’t think of ordering, I do love pineapple and who doesn’t love cheese?! So, I figured pineapple and cheese (like on the pizza) would be great paired together for my tropical craving. I didn’t want to make this just like the pizza, so I skipped out on tomato sauce and ham. Instead, I seared up some chicken in my skillet, added a blend of spices that felt tropical to me, then loaded the chicken up with pineapple and cheese before I threw it in the oven. This dish came out juicy and cheesy with tons of impactful flavors. Another great perk about this recipe (and other chicken skillet dishes) is that it’s finished in 15 minutes!

Ingredients:

  • 2-4 chicken breasts

  • 2-4 pineapple rounds

  • 1 cup shredded mozzarella cheese

  • Red onion, chopped

  • Fresh cilantro, chopped

  • 1 lime

  • 1 tsp paprika

  • Salt and pepper

  • 1 tsp garlic powder

  • Olive oil

Instructions:

  1. Preheat the oven to 375.

  2. Heat oil in a cast iron skillet (or another oven safe pan) over medium heat. Season the chicken with salt and pepper on both sides.

  3. Sear topside down 5 minutes. Flip. remove heat. Sprinkle seasoning, ½ cup cheese, pineapple, ½ cup cheese. Bake for 10 minutes, or until chicken is cooked through, juice should run clear. Garnish with onion, cilantro and lime
