Pepperoncini Chicken Pasta

Cooking bone in chicken drumsticks or thighs in a pan with just a few other simple ingredients always turns out to be a great sauce for pasta. This type of pasta is great for when you might just have one tomato left, a little bit of parsley, one pepper or just not a whole lot of that one ingredient. Use broth and juices from the ingredients to slowly cook the chicken while it creates its own sauce. Using the lid to cover your pot or pan is important for a recipe like this or all that juice will evaporate. In under 45 minutes you’ll have tender, juicy chicken with an incredible sauce to toss your pasta in.

Ingredients:

  • 6 chicken drumsticks or bone-in thighs

  • Olive oil

  • 1-2 handfuls fresh parsley, chopped

  • Salt

  • Pepper

  • 5-8 pepperoncini, sliced and seeds removed

  • 1-2 cloves of garlic, smashed

  • 1 cup chicken broth

  • 1 cup parmesan cheese

Instructions:

  1. Season chicken with salt and pepper on each side.

  2. Heat about 2 tablespoons of olive oil in a large pan over medium heat, then add the chicken. Brown chicken about 1-2 minutes on all sides until it has lightly browned all over.

  3. Add peppers and garlic to the pan, drizzle with olive oil. Then add the broth and parsley, lightly stir to combine then cover and lower heat to medium-low/low and let simmer untouched for 30 minutes.

  4. When time is up, turn off heat and remove chicken to a plate, set aside to cool and in the meantime start boiling a pot of water. Once chicken is cool enough to handle, shred chicken off the bone and return the meat back to the pan with peppers. Stir to combine and let simmer on low until the pasta is ready.

  5. Cook pasta until al dente, reserve about ½ cup of the pasta water and set aside. Drain pasta and transfer to the large pan with peppers and chicken. Drizzle a little olive oil over the pasta, add about ½ cup of cheese, stir to combine. Add a little of the pasta water if it is a little dry. Let the pasta simmer with the chicken and peppers for about a minute while tossing.

  6. Serve immediately with extra cheese to garnish.
