No Bake Oatmeal Chip Chunks

I love making no-bake cookies with healthy ingredients because they make tasty, guilt-free treats. They are great on the go for a quick snack or bite for energy. These are still technically a “cookie” so don’t go over indulge, although, they are quite irresistible!

Ingredients:

  • ½ cup oat flour (ground oats)

  • 2 cups rolled oats

  • ½ cup unsweetened coconut flakes

  • ⅓ cup tapioca flour

  • 2 Tbsp brown sugar

  • ½ tsp salt

  • ⅓ cup agave nectar

  • ½ cup coconut oil, melted

  • ½ cup chocolate chips or ½ cup unsweetened dried fruit

Instructions:

  1. Line a pan with parchment paper. You can use an 8x8 square baking dish or a loaf pan. The smaller the pan the thicker cut pieces you’ll end up with. 

  2. Grind up the oats until they turn into a flour, set aside.

  3. Use a stand mixer or electric mixer to combine: oat flour, oats, coconut flakes, tapioca flour, brown sugar and salt. Once combined, then mix in the melted coconut oil and agave nectar.

  4. Stir in your add on by hand. If you don’t want to use chocolate chips, you can use small dried fruit pieces like raisins, cranberries, blueberries or tart cherries (chopped).

  5. Press oat mixture into your prepared pan. Refrigerate for 2 hours. Then cut into square pieces or rectangle bars.

  6. Store in an airtight container in the fridge.
