Mediterranean Loaded Baked Potato

I love how creative you can get with loaded baked potatoes. They don’t always need to be loaded up with greasy, heavy ingredients either. Now of course your traditional loaded potato is tasty, but you can play around with other flavors and come up with some pretty delicious alternatives. Especially if you are trying to make it healthier! Plain Greek yogurt is always my number one go to for a mayo or sour cream substitute. You can load your potato with anything you love, try: tex mex, taco, Italian, Greek or any flavors you love!

Ingredients:

  • 1 russet potato

  • Salt

  • Pepper

  • Garlic powder

  • Olive oil

  • Toppings: Greek yogurt, feta, fresh dill, cucumber, fresh chives, salt and pepper, drizzle of olive oil, lemon wedges.

Instructions:

  1. Scrub and wash potato under cold water, slice in half lengthwise, pat dry with a paper towel.

  2. Drizzle a tablespoon of olive oil over both of the halves. Give a little sprinkle of each: salt, black pepper, garlic powder. Rub seasoning and olive oil to evenly coat each half.

  3. Preheat the air fryer for 3-5 at 350. Then, spray the basket with a little olive oil then place the halves in the basket. Cook for 10 minutes, then flip over to cook another 10  minutes.

  4. Remove from the air fryer. Let cool, then pinch the corners and fluff the inside with a fork. Load on your toppings.

  5. No Air Fryer? Bake your potatoes like this: Preheat the oven to 400. You will use the middle oven rack. Wash the outside of your potato, pat dry. Use a fork to pierce holes around the potato for the steam. Then season with the same ingredients above and rub to coat evenly. Then place the potato on a baking sheet and bake from 30 to 60 minutes. This will depend on the size of your potato. You will know it is done because it will: have wrinkly skin, may make sizzling sounds, tender when you pierce it with a fork. When done, remove from the oven and carefully cut lengthwise, fluffy up the middle then top with toppings!
