Tropical Oat Muffins
These make the perfect breakfast or snack on the go because they are healthy and packed with protein. It’s not a typical muffin you’d get at your local cafe or bakery, but this muffin shaped treat is packed with nutrients making it guilt-free. The only sweetener added is maple syrup, which is pure and natural. Other than that, all the other sugar in these muffins come from fruit. There are no butters or oils, only Greek yogurt, nuts and eggs, giving them lots of protein. Another great source of protein and fiber comes from the oats, which also makes these gluten free. These are a smart option to add into your meal prep so you have the convenience to grab a healthy snack, breakfast or treat on the go.
Ingredients:
3 cups mashed bananas (very ripe bananas)
1 cup macadamia nuts, roughly chopped or crushed
1 cup (200g) pineapple chunks
½ cup unsweetened shredded coconut
3 large eggs
2 cups oat flour (3 cups ground old fashioned oats)
¾ cup vanilla Greek yogurt
1 cup maple syrup
¾ tsp salt
½ tsp baking soda
2 tsp baking powder
Instructions:
Preheat the oven to 350. Grease a muffin tray, or insert inners (you may use a 9 x 5 x 3 loaf pan, bundt cake pan or another type of baking dish, just know to adjust cooking times). Set aside.
In a medium mixing bowl, whisk together the dry ingredients: flour, salt, baking powder and baking soda, set aside.
In a large mixing bowl or stand mixer, begin to beat the Greek yogurt and maple syrup until creamy. Add eggs one at a time and continue beating. On low speed, add the dry ingredients in three additions, alternating with two additions of banana. Mix until just combined. By hand, stir in coconut, pineapple and nuts.
Pour batter into the prepared pan. In a muffin tray bake for about 25 minutes. In a loaf pan it may take 60-70 minutes. Best test is to bake until a toothpick inserted in the center comes out with only a few moist crumbs attached.
