Dill Pickle Hummus
I am a big fan of creating your own dips at home. When you buy store packaged ones you get many unnecessary ingredients with it like words you can’t even pronounce. There are some great brands out there that have a good ingredients list on their nutrition label, so if you are choosing store bought, shop with that in mind. Otherwise, get playing in the kitchen with the endless possibilities. Hummus is one of my favorites to create because I love playing with the flavors in it and enjoy its nutrition. I love pickles and after discovering the pickle hummus at Trader Joe’s I knew it was time to create that flavor at home. It’s super easy and I would suggest choosing quality pickles that also have ingredients on the label you can pronounce. My favorite brand of pickles is called Grillo’s Pickles. Better yet, if you make your own pickles, use those!
Ingredients:
About 15 oz canned/carton chickpeas, drained and rinsed
¼ cup tahini
1 lemon, juiced
5 or more dill pickles
1-2 cloves of garlic
1 tbsp freshly chopped dill
1 tsp salt
2 tbsp extra virgin olive oil, plus more to drizzle
½ cup or more of white vinegar or the pickle juice (or water for mild taste)
Instructions:
In your food processor or high speed blender add: chickpeas, tahini, lemon lemon, 1-2 cloves of garlic, salt and olive oil. Blend until smooth, then add about 3 pickles. Blend or pulse a little to still have some pickle chunks and add the vinegar or pickle until you reach your desired consistency and thickness.
Pour into a serving bowl, garnish with chopped pickles, fresh dill and a drizzle of extra virgin olive oil.
Store in an airtight container in the fridge for up to a week.
