Cappuccino Pancakes

Because why not!? Adding a fresh, strong espresso to your pancake batter will instantly turn them into cappuccino pancakes. Maybe, you want to call them a mocha latte pancake? Then, just load in the chocolate. I added chocolate chips into my cappuccino pancakes, then shaved some chocolate overtop to give them the look of a cappuccino. Sprinkling ground cinnamon also adds a beautiful element to create a cappuccino version of a pancake.

Ingredients:

  • 2 cups all purpose flour

  • 2 ½ tsp baking powder

  • 1 tsp salt

  • 1 egg

  • ¼ cup white sugar

  • 2 tbsp strong espresso

  • 1 ¼ cup milk

  • Optional: ½ cups chocolate chips

  • 3 tbsp butter, melted (plus more for pan)

  • Optional garnish: ground cinnamon, chocolate shavings, whipped cream or frothed milk

  • Syrup

Instructions:

  1. In a small bowl, whisk: flour, baking powder, salt. Set aside.

  2. In another medium sized bowl, whisk egg and sugar until creamy. Whisk in the melted butter and continue to mix until smooth and creamy.

  3. In a small measuring cup, add the espresso to the milk, then pour this mixture into the egg mixture. Stir until combined then slowly start to whisky in the flour mixture. Stir until smooth so there are no more lumps. If you want to stir in chocolate chips, do so now.

  4. Heat a skillet over medium heat, once it is hot either use a butter spray or use butter to grease the pan, then ladle a scoop of the pancake mixture onto the pan. Once you notice little bubbles form on the batter it will be ready to flip, so first check to see that underneath looks golden, then flip to cook the other side, about another minute or two. Transfer to a plate and keep warm. Continue until all the batter is used up. If you need to re-grease the pan, go ahead. Garnish with whipped cream or frothed milk, then sprinkle on chocolate shavings and ground cinnamon. Serve with syrup and a cappuccino.
