Wonton Soup

Semi-homemade wonton soup is quick, easy and delicious! If you don’t already have homemade chicken or vegetable broth at home, you can always swap that out for a store bought broth instead. If you have an Instant Pot and want to make your own broth, try this Easy Homemade Chicken Broth recipe in your Instant Pot. It is so easy and convenient to make broth this way and save hours in the kitchen.

The semi-homemade part of this recipe is a hack to use frozen wontons. If you have a Trader Joe’s, I was able to find two different frozen wonton options. I love their chicken soup wontons. They are perfect for this recipe. While you are at Trader Joe’s, another great option you can use for ginger is their frozen ginger cubes! They are so convenient to have on hand for adding ginger into recipes. Now, if you don’t have a Trader Joe’s that doesn’t mean you can’t find either of these options elsewhere. Browse your local grocery market, I’m sure you’ll have some luck. This bowl of chicken wonton soup makes a lovely bowl of comfort while keeping it light. Enjoy!

Ingredients:

  • 1 leek (white part), sliced

  • Fresh ginger or 1 tablespoon ginger paste

  • 2 baby bok choy (or 1 one regular size), sliced

  • 1 tablespoon olive oil

  • 6 cups chicken or vegetable broth

  • 6-12 frozen wontons

  • Salt and pepper, to taste

  • Optional garnish- freshly chopped cilantro and sliced scallions


Instructions:

  1. In a large pot, saute leeks and ginger in olive oil over medium-low heat. Saute for 2-3 minutes until fragrant and tender. 

  2. Add broth and raise heat to medium-high. Let broth come to a light boil, then add the frozen wontons into the pot. 

  3. Stir and cook for about 3-5 minutes, or until wontons are cooked and hot.

  4. Stir in fresh, thick slices of bok choy. Lightly season with salt and pepper. After the bok choy has wilted, turn off the heat.

  5. Ladle into soup bowls and garnish with sliced scallions and cilantro if desired.
