Instant Pot Marinara

Creating your own tomato sauce at home doesn’t need to be an all day process when you have an Instant Pot! While using the same simple ingredients, you can create a fresh tasting, homemade marinara in under an hour. Sometimes I like to just make a pot of this sauce to have on hand for the week because I know I will be able to put it to good use. I also like how convenient it is for a last minute meal. Sauce doesn’t always mean it is just for pasta. You can use a cup of it at a time to add into soups or stews. It is also great with rice and cheese, or make it ahead of time for when you are going to assemble lasagna. There are so many great ways to use marinara sauce, play and get creative.

Ingredients:

  • 28 oz. can whole or crushed San Marzano tomatoes

  • 2-3 cloves of garlic, peeled and smashed

  • 1-2 teaspoons of salt

  • Olive oil

  • Diced yellow onion, about ½ cup or so

  • Fresh basil leaves and stem

  • Fresh parsley

  • 1 cup of water

Instructions:

  1. Press the saute function on your Instant Pot, add about two tablespoons of olive oil and diced onions. Stir with a wooden spoon and saute for about two minutes, then add the smashed garlic and stem of the basil leaves. Continue to saute until fragrant and onions are translucent. Do not burn the garlic.

  2. Press cancel to end the saute, then remove the basil stem. Add the tomatoes. If you like your sauce smooth, pour the can into a blender and puree or use an immersion blender until smooth. After pouring the tomatoes into the Instant Pot, fill the can or canister they were in with a cup of water to “rinse” some residue and pour into the Instant Pot.

  3. Add fresh basil leaves and a few sprigs of fresh parsley. Sprinkle salt and drizzle another tablespoon of olive oil.

  4. Lock lid into place and make sure the valve is turned to sealing position.

  5. Pressure cook on high for 20 minutes, then natural release. After about 10 minutes or so you can quick release. Carefully remove lid, then press cancel.

  6. Press saute button again and let saute for a few minutes to thicken sauce until desired consistency then turn off the Instant Pot.

  7. Use sauce for desired purpose or store in a container to keep the fridge until ready to use. Stays fresh in the fridge for up to 5 days.
