CrockPot Apple Cider Pork Loin

The cinnamon and apple flavors make this recipe lovely for the fall and winter months. Cooking the pork loin on low for 5 hours is perfect to not it get tough or dry. If you wish to create a gravy, you can strain the liquid made in the slow cooker and transfer to a saute pan. Whisk in cornstarch to thicken into a gravy as it simmers. The sweet flavors from the apples mixed with the spices of nutmeg and cinnamon are so tasty, then the hint of rosemary makes the perfect combination. Serve this with anything you’d like, some ideas are: over a salad, rice, crusty Italian bread, veggies, or French fries.

Ingredients:

  • 3-4 pounds boneless pork loin 

  • 1 apples, sliced

  • 1 onion, thick slices

  • 2 cups of apple cider

  • 1 tsp salt

  • 1 tsp dried rosemary

  • ½ tsp ground cinnamon

  • ¼ tsp garlic powder

  • ¼ tsp ground nutmeg

  • ¼ tsp black pepper

Instructions:

  1. Mix together all the seasoning into a small bowl, set aside.

  2. Place sliced onions at the bottom of a slow cooker.

  3. Trim any extra fat on the pork loin and discard it. Pat pork loin dry with a paper towel then use a sharp knife to cut slices down the length of the pork loin. Place an apple slice in each slit. Add any extra slices to the bottom of the slow cooker with the onions.

  4. Rub the seasoning mixture all over the entire pork loin. Then, place on the onions and apples in the slow cooker.

  5. Pour 2 cups of apple cider into the crock pot. Cover lid, let cook on LOW for 5 hours.

  6. Once done, carefully remove from the slow cooker. It may fall apart, be careful. Cut into chunks or shred with two forks. Spoon some of the juice and onions left in the slow cooker over the meat for extra juice.

  7. Serve immediately with rice or vegetables.
