Lentil Watermelon Salad
Creating new salads can always be fun and the ideas are endless. I love this salad because there were minimal ingredients, yet it is packed with everything! Besides being loaded with protein from the lentils and cheese, it has an explosion of flavors. You get a bite of sweetness from the watermelon, tart from the lemon, salt from the feta and the fresh mint just tops it off!
*If you want more watermelon or lentils, you can adjust to your liking. Also play with the lemon juice and seasoning, season to taste.
Ingredients:
about 2-3 cups cooked lentils
about 2-3 cups watermelon, cubed
1 ½ cup fresh feta cheese, cubed
Fresh mint leaves, sliced
1 lemon, juice and zest
2 tablespoons olive oil
Salt
Black pepper
Instructions:
Place lentils in a large mixing bowl and keep in the fridge to let cool until you’re ready to use.
Prepare your watermelon, feta, and mint leaves. Set aside.
Remove lentils from the fridge.
Then add the watermelon, feta and mint leaves.
Zest the lemon over everything, then slice the lemon and squeeze its juice over the mixture, then drizzle the olive oil in as well. Add another lemon if you want more lemon juice.
Sprinkle with salt and pepper, then gently toss to combine. Season to taste.
Cover with plastic wrap and keep covered in the fridge until you’re ready to serve.
