Wahoo Ceviche

This sweet, tasty meat makes wahoo a delicious fish to prepare as sashimi. This was extremely fresh, which is the only way to go when you’re preparing sashimi. It’s actually best to have the freshly caught wahoo fillets sit on ice for 24-36 hours to bring out the best flavor in the meat. If you have a freshly caught fish like wahoo and ahi tuna, sashimi is a great option. With a few simple steps you’ll have a mouth-watering appetizer everyone will love.

Ingredients

  • 1 pound fresh wahoo, filleted and cleaned

  • ½ cucumber, sliced into long ribbons

  • ¼ cup fresh cilantro, chopped

  • 1 jalapeno, thinly sliced

  • 1-2 teaspoons fresh ginger, minced

  • Mango, cubed

  • 1 tablespoon sesame seeds

  • 1 tablespoon toasted sesame oil + 1 tablespoon soy sauce or Ponzu sauce

  • 1 lime, sliced

  • Pickled ginger

Instructions

  1. Let the freshly caught wahoo fillets sit on ice for 24-36 hours for the best taste. This will give the fish proper time to develop flavor. Using a very sharp knife, cut the fillets into very thin slices.

  2. This is optional for a pretty presentation: lay long strips of cucumber on your plate, then place the thin slices of wahoo on the cucumber.

  3. Next, place thin slices of jalapenos on each piece of fish.

  4. You can either mix together some soy sauce and sesame oil or just use ponzu sauce. Use this to drizzle over top of the fish.

  5. Squeeze some fresh lime juice over top and sprinkle with fresh cilantro.

  6. Serve immediately.
