Pulled BBQ Chicken and Jalapeno Slaw

Every time I make pulled pork or chicken I use the slow cooker. It might be one of the most easy and delicious meals to use in that thing. Everyone loves it too. I mostly use chicken to be a little healthier, but pork is cheaper and very tasty... if you are feeding a large crowd, BBQ pulled pork can go a long way and is truly a crowd pleaser. I made a jalapeno slaw this time to add on the sandwiches. It was a great addition giving the sandwich an extra crunch and bite. You can add your favorite BBQ sauce or make your own. In no time and minimal prep, you will have some tasty BBQ that anyone and everyone will enjoy...and you really don't have to do much work, at all!

Use your favorite bbq sauce, I always love using Tom's Original BBQ sauce.

Ingredients

  • 4 chicken breast, cleaned and trimmed of fat

  • 2 jars BBQ sauce

Slaw:

  • 3 cups shredded cabbage or just about 1/2 bag of coleslaw

  • handful cilantro, chopped

  • 2 jalapenos, diced, remove seeds

  • 1 tsp salt

  • 1 tsp cayenne pepper

  • 2 tsp white vinegar

  • 1/2 cup mayo

  • 1/4 cup milk

  • 1 tbsp sugar

  • ground black pepper

Instructions

  1. Place the chicken breasts in the slow cooker and pour enough BBQ sauce to where it is almost covered in it. Cook on low for 4-5 hours.

  2. After 4 hours it is nice to take out the breasts and drain the juice (throw out). Then put the chicken back in and begin to shred with two forks. Add more BBQ sauce and stir. You may cook another hour with it like this or you can just let it sit keeping warm in the slow cooker until ready eat. Use any extra sauce for drizzling on later or to juice it up again if it needs it.

  3. Slaw: Add the cabbage, cilantro and jalapenos into the mixing bowl.

  4. In a separate small mixing bowl add the milk, mayo, cayenne, salt, sugar, vinegar, and black pepper. Mix well and add to cabbage. Stir to combine and refrigerate until ready to use.
