Nutella-Cookie Dough Ice Cream

Many ice cream recipes call for preparing a custard first, which is delicious. With this recipe, there are no eggs and no cooking involved first, so it can be prepared and ready to eat in no time. It is just simply preparing a fast vanilla ice cream then adding the Nutella and chunks of cookie dough at the end. Serving ice cream in a just finished Nutella jar is a fun little way to scoop out any Nutella that is leftover ;)

You can find eggless cookie dough at Fresh Market or Whole Foods, there are also many recipes online to make your own eggless cookie dough and it is really easy. Use a 1.5 quart ice cream maker. Make sure the freezer tub of the ice cream maker has been in the freezer for at least 24 hours. After the ice cream is finished, before storing in freezer you can stir in extra Nutella for some thick swirls added in there :) Top with extra cookie dough or Ferrero Rocher and enjoy!

Ingredients

  • 1 cup whole milk

  • 3/4 cup sugar

  • 2 cups heavy whipping cream

  • 1 tsp vanilla extract

  • Nutella

  • Raw (eggless) cookie dough

  • Ferrero Rocher as a topping, optional


Instructions

  1. In a mixing bowl add milk, cream, sugar and vanilla.

  2. Stir until everything is combined and sugar is dissolved.

  3. Plug in your ice cream machine and turn on.

  4. Add mixture to the machine and let churn for 15 minutes.

  5. In the meantime, roll out little pieces of cookie dough and set aside on a dish to throw in later.

  6. After 15 minutes, the ice cream has thickened and start adding pieces of cookie dough into the tub as it mixes in with the ice cream. Also add a few spoons of Nutella.

  7. Let it mix for another 5 minutes.

  8. Turn off the machine and add mixture to either an air tight container for freezing or an ice cream tub (made for storing ice cream) Freeze for at least an hour before eating.
