Chicken & Broccolini Taco

I didn't have much in the kitchen besides these few ingredients. It turned out to be a healthy and tasty dinner. Even if you just add this chicken and broccolini over rice and squeeze some fresh lemon juice over top, it will be delicious! I had the corn tortillas so thought it would be fun to make them into a taco. I liked this meal because I only had to use one pan and there wasn't much prep, so it was pretty quick and simple.

Ingredients

  • 1 bunch of broccolini

  • 2-3 chicken breasts

  • 2 cloves of garlic, peeled and smashed

  • olive oil

  • salt

  • pepper

  • oregano

  • garlic powder

  • 1-2 lemons

  • Asiago cheese, shredded

  • corn tortillas

Instructions

  1. Clean and trim fat off the chicken, slice into strips. Place the chicken in a large dish or baggie. Add over the chicken and mix to combine: 2 tablespoons of olive oil, sprinkle of salt, pepper, garlic powder and oregano. Let sit while you prepare the broccolini.

  2. Wash the broccolini and trim about an inch off the ends. Heat a large pan over medium-low heat. Add a tablespoon of olive oil and the garlic. Be careful not to burn the garlic. Sauté the garlic for about a minute then add the broccolini. Add another drizzle/tablespoon of olive oil. Turn or mix occasionally to cook evenly, about 5 minutes or so. Remove from heat and place the broccolini on a plate. Cover and keep warm until you are ready for it.

  3. Use the same pan and place over medium heat, once hot add the chicken along with the oil it has been marinating in. Squeeze 1/2 a lemon over the chicken. Let the chicken cook, turning the chicken occasionally to make sure it cooks throughout.

  4. Once there is not any more pink in the chicken, remove from the heat.

  5. It is nice to warm up the tortilla in the microwave, about 7 seconds.

  6. Place chicken and broccolini on a tortilla, squeeze fresh lemon juice over them then top with asiago cheese.
