Broccolini and Tenders

I put this entire dinner together in under 30 minutes, not kidding! It was incredibly easy, super fast, and amazingly delicious. Oh yeah, and healthy! I know I say this often, but only because it's so true and couldn't be any other way here. I mean even the clean up was a piece of cake...a cutting board, knife, one pan, and the entire meal is complete. How could you not want to play with something like this. It's a very people friendly recipe ;)

Ingredients

  • 2 tablespoons olive oil

  • salt and pepper

  • dried chili peppers, roughly chopped (optional)

  • 3 cloves of garlic, smashed

  • 1 bunch of broccolini

  • 6 chicken tenders

  • 1 lemon

Instructions

  1. Have the chicken tenders out, season one side with a sprinkle of salt and pepper.

  2. Heat a large pan over medium heat. Add olive oil and hot chili peppers.

  3. Once the pan is hot, add the chicken (seasoned side on the pan) then sprinkle salt and pepper to the other side. Let cook for a few minutes until you see the bottom and edges turning white.

  4. When ready, turn the chicken over and let cook another few minutes.

  5. In the meantime, rinse the broccolini and just trim about 2 inches off the bottom of the stem. Have your garlic smashed and ready as well.

  6. Once you don't see any more pink around the edges of the chicken, push over to one side of the pan and add the broccolini to the other side. Give them a small drizzle of olive oil and a sprinkle of salt and pepper. Add the garlic to the pan now too. Lower heat to medium-low.

  7. Cut your lemon in quarters and squeeze all its juice over the chicken and broccolini. Leave two slices of the lemon in the pan for the duration of the time.

  8. Now, occasionally turn the broccolini to cook all sides and mix well into the juices. You should give the chicken another turn as well making sure it now has a golden color to it.

  9. Once your chicken is done and no longer pink in the center, remove from heat.

  10. Transfer some chicken and broccolini to a plate and use the lemon slice from the pan to squeeze anymore juice you can get out of it.
