Turkey Bacon & Asparagus Orecchiette

I only had a few things left to work with in the house, so I came up with this dish and it took no time at all. It is packed with lots of flavor from the turkey bacon and then buttery creaminess from the mascarpone cheese you won't be able to pass up seconds. While the water is boiling and the pasta cooks, you can prepare and cook the rest. It can all be done under 30 minutes! You also do not have to use asparagus. Broccoli or peas would be a nice substitute if you are looking for something else or just have those on hand instead.

Ingredients

  • 1 tbs olive oil

  • 2 tsp of oregano

  • ground black pepper

  • 1 small yellow onion, chopped

  • 3 cloves of garlic, chopped

  • 1 bundle of asparagus, cleaned and ends removed

  • 8 oz. container of mascarpone cheese

  • 8 oz. pack of turkey bacon

  • Handful (plus more) Parmesan cheese

  • 1 box of orecchiette pasta

Instructions

  1. Start boiling water for pasta.

  2. In the meantime, chop the onions and garlic. Slice the asparagus into about 1 inch pieces. Then slice the bacon into strips.

  3. Heat a large pan and add olive oil. Once hot, add onions, stir for about a minute. Then add garlic and the bacon. Stir to mix well and add the oregano and ground black pepper. Cook, stirring occasionally for about 5 minutes on medium heat.

  4. Keep an eye when to add the pasta when the water is ready.

  5. Return back to the pan, add the asparagus and cook for another 2 minutes before adding the container of mascarpone and stir until all melted and mixed well. Lower the heat to low and you can cover lightly with foil to keep juicy and warm until the pasta is ready.

  6. Drain the pasta and then return to the pot, add the creamy mixture to pasta and mix to combine. Add a nice handful of Parmesan cheese, stir and serve warm. You can sprinkle more cheese on top to garnish.
