Steak Tacos

So I had a steak taco night and from there it escalated into a steak and egg taco breakfast, then onto a steak taco salad lunch :) It's great using leftovers for other meals. I hate to see things go to waste. I added images of the three different ways I had prepared the steak tacos. I listed the recipe on how to cook the steak and what I used to assemble them, which is also a personal preference. Tacos are so easy to play around with, you can really add and create whatever you like. Have fun!

Ingredients

  • Flank steak

  • Rub: cumin, cayenne pepper, ground jalapeno pepper, garlic powder, chili pepper, salt, ground pepper

  • Olive oil

  • Corn tortillas

  • Toppings: romaine lettuce, queso fresco, plain greek yogurt, salsa, guacamole, habanero pepper hot sauce, fresh lime juice

Instructions

  1. Take out all your spices. Sprinkle one side with each spice and a drizzle of olive oil, rub.

  2. Flip over steak and do the same so both sides are seasoned and massaged with rub and olive oil. Cover and let marinate. I left mine in the refrigerator all day and took it out about 30 minutes before I needed to cook it. If you are using it right away, letting it sit to marinate on the counter for 30 minutes is fine too.

  3. I got my non-stick pan really hot before I added the steak. I added the steak to the plan for about a minute or so on each side to give it a nice sear.

  4. Then I turned the broiler on high and placed the steak on a rack and baking sheet and slipped it into the oven for about 4 minutes (for medium rare) Keep an eye on it because the broiler cooks it fast.

  5. Let sit for about 5 minutes and transfer to a cutting board to slice.

  6. Assemble your tacos.
