Roasted Carrots & Beets

Looking for an easy, healthy side dish? These take minimal effort and are delicious! Packed with tons of vitamins and flavor, you'll love these roasted veggies as a side dish for any meal!


Ingredients

  • Bunch of beets and big carrots: 6 beets, 12 carrots. Peeled and cleaned

  • 4-5 cloves of garlic, peeled and kept whole

  • salt

  • pepper

  • cinnamon

  • ground cumin

  • dried oregano

  • olive oil

Instructions

  1. Preheat oven to 400. Line a baking sheet with parchment paper.

  2. After peeling and cleaning your beets and carrots, add the beets to a mixing bowl and carrots to the baking sheet.

  3. Drizzle them both with olive oil. Sprinkle them both with salt and pepper.

  4. Sprinkle oregano to the beets and mix well, then add to the baking sheet.

  5. Sprinkle cinnamon and ground cumin only to the carrots.

  6. Place in oven and bake for 45 minutes. At this point check the beets, they will probably need another 15 minutes. So just remove the carrots from the baking sheet and transfer to a plate, set aside and keep warm. Put the beets back in the oven for another 15 minutes.

  7. Place on a serving dish together.
