Bacon & Cheddar Pierogies

I don’t make pierogies often, but when I do I remember how much I like them. Frozen pierogies are great to keep in your freezer for last minute, quick dinners, when you have nothing else to cook. The simple cheddar pierogies are a great choice for kids. For children, you’ll most likely end up keeping them plain. They can be baked, boiled or pan sauteed. Plain pierogies with sour cream (or plain Greek yogurt) is a fast and tasty, kid-friendly menu item. Now for grown ups, the possibilities are endless. Try sauteing bacon, onions or other veggies to put together a very flavorful dish. Play around with these little pockets of fun!

Ingredients

  • 1 box of frozen cheddar pierogies, 12 pierogies

  • ½ sweet onion, sliced

  • 3 cups shredded brussel sprouts

  • ½ cup shredded cheddar cheese

  • 1 lb. thick cut bacon, sliced into thick strips

  • 1 tbs. olive oil

  • Sprinkle of garlic salt

  • Optional dipping sauce: sour cream, plain Greek yogurt, ranch dressing

Instructions

  1. Heat a large frying pan over medium heat. Then add olive oil. Once hot add the bacon and cook until crispy. Once cooked, turn off heat and use a slotted spoon to remove the bacon and transfer onto a plate lined with a paper towel. Set aside.

  2. You can discard some of the bacon grease if there is a lot, but do leave some in the pan. Return to low heat. Add the onions, season with black pepper. Saute for about 2 minutes.

  3. Add the pierogies and cook for 8 minutes, then flip to their other side for another 8 minutes of cooking. Before the last 8 minutes is over, add the brussel sprouts to the pierogies for about 3-5 minutes. When the final 8 minutes is up season the brussel sprouts with black pepper and a sprinkle of garlic salt. Then stir everything to combine.

  4. Add the bacon and stir. At this point the brussel sprouts should all look cooked with a nice green color and oily finish. Turn off heat.

  5. Sprinkle some cheddar cheese over top and serve warm. Ranch, sour cream, or Greek yogurt make a wonderful dipping sauce.
