Acai Berry Bowl

If you live in an area with all the trendy juice bars popping up I am sure you are familiar with these delicious bowls of heaven! If not, this bowl is basically a fruit parfait. The base is made with Acai berries and almond milk/coconut water. Adding another frozen fruit like bananas or mangoes into the base makes a fantastic addition. I usually just go with what I have at home. To make this a more filling meal, add a scoop of protein powder! After you blend these frozen fruits together to create a mixture that resembles a "sorbert" just go ahead and layer on fruits, granola, seeds, honey, coconut flakes...whatever you like! Enjoy this treat!


Find Acai Berry packs in the freezer section at Whole Foods. Add protein powder to blender for more substance. Get creative with your toppings, whatever you like!

Ingredients

  • Base: 2 packs frozen acai berries, 3/4 cups chopped mango, 1/2 cup coconut water or almond milk

  • Toppings: sliced fruits, granola, gogi berries, honey, coconut flakes

Instructions

  1. Run the frozen packs of acai under water for 5-10 seconds, until it is easy to break up (not completely thawed)

  2. Break acai berry into pieces as you put them into a blender. Add the mango and coconut water. Blend until a smooth consistency.

  3. Pour into a bowl and top with granola, fruits, seeds, coconut flakes then drizzle with honey.
